Aerate
A synonym for sift. To pass ingredients through a fine mesh to break up large pieces and to incorporate air into the ingredients to make them lighter.
Batch
Several breads, cakes or biscuits cooked together.
Batter
Dough that is too moist to knead. Also used to describe texture of mixture before all the flour has been added.
Beat
To mix ingredients together with a circular up and down motion using a spoon, whisk or rotary / electric beater.
Biscotti
A type of Italian cookie that is first baked in a loaf and then cut into slices and baked again. The resulting cookies are very crunchy and are excellent when served with coffee or cappuccino.
Blanch
To plunge fruits or vegetables into boiling water.
Blend
To stir ingredients until they are thoroughly combined.
Brownie
Small, rich, unleavened chocolate baked cake-slice, named after its brown color. Brownies are sometimes covered with fudge and may contain nuts or chips.
Butter Tarts
Unique to Canada, they start with a flaky pastry shell that is filled with a sweet mixture of butter, brown sugar and eggs. Some would compare them to the American pecan pie or even the British treacle tart
